In her debut cookbook, Mia Casto draws on her experience as a Puerto Rican chef living in the mainland United States to bring readers an exciting taste of the island’s rich cuisine. While Mia spent her early career working under star chefs such as Thomas Keller and Wolfgang Puck, when the pandemic hit, she found herself craving the foods of her native San Juan. She reached out to her beloved abuela, the family’s master chef. This book is a collection of those recipes, expertly adapted with her professional eye for the American home kitchen. This book will teach readers how to recreate the signature flavors and spices of Puerto Rican cooking at home, and the most iconic dishes of the island, including ceviches, yuca fritters, flans, and many preparations of plantain.
